Bread Halwa - A virtual B'Day treat for Preeti

This month is a season of an array of birthdays,in that line next comes my buddy blogger Preeti. As planned already by myself and my co-blogging friends we chose to select Sweets or Savory from her space and replicate at our space on the note of celebrating her birthday.

This bread halwa which i made from her space was so simple yet a delicious recipe.All at my home loved this halwa.I could feel small chunks of the bread to munch while tasting the halwa.Those small crispy chunks added a different variation to halwa.



Ingredients


Bread Slices - 6 to 8 (I used 8 slices of whole wheat multi grain bread)
Sugar - 3/4 Cup 
Water - 3/4 Cup
Vanilla essence - 1 tsp(optional)
oil - to fry the bread
Nuts - to garnish
Ghee - 3 tsp

Method


  • I have used whole wheat multi grain grain,which contains some whole grains which added a crunchy feeling to these halwa. I sliced the breads into cubes,i didnt remove the edges of the bread.All though it tasted good.Cube the bread slices and fry them in oil litte by little and keep aside.



  • In a kadai add sugar and water and prepare sugar syrup.Wait until it reaches to One-string consistency.It might take 7-8 minutes.Check with your index and thumb finger by touching the syrup to check for the string consistency.Also fry some nuts in ghee and keep aside.




  • Add the fried bread slices and let them soak them in the syrup and meanwhile mash them with the ladle and saute them until they leave out the oil which we used to fry the slices.

  • Once it started leaving the oil and comes non-stciky the halwa is done.Garnish with fried nuts and serve them.

Whole Wheat Custard Sponge Cake - A Virtual Treat for Priya Suresh

Whole Wheat Custard Sponge Cake,a recipe took from Priya Suresh Sis space.Today is her birthday ,so to celebrate her birthday as her co-bloggers and friends we people decided to make some bake  from her space and a dessert from our own kitchen.Recently i was using All purpose flour/Maida frequently .i wanted to take some healthy cakes from her space,which does not require too much of time.I found her's whole wheat custard cake recipe which sounds to be simple and  interesting ,i was very much impressed with the simple and easy cake ,even though i say it's a simple cake,the taste of the cake was superb.I could find the flavor of both wheat and custard in a single menu.

This cake is dedicated to the virtual birthday party for Priya Suresh Sis.Sis Happy Birthday

This is a perfect sponge cake made with wheat flour.I loved these yellow colored cakes.You could find below how spongy the cake is.






Ingredients


Wholewheat flour - 1Cup
All purpose flour - 1/2cup
Castor Sugar - 1cup 
Baking powder - 1tsp 
Baking soda - 1/2tsp
Vanilla extract - 1tsp 
Eggs -  2
Custard powder - 1/2cup 
Oil -1/2cup (I used refined sunflower oil)
Yogurt - 1cup 



Method


  • Preheat the oven to 325F/180C
  • Sieve the flours, baking powder,baking soda and custard powder together and keep aside.


  • Beat the eggs until they turn fluffy then add the castor sugar and beat once.Then add the oil and yoghurt and again beat for a while. Don't over mix them.


  • Now mix the vanilla extract,already sieved flours gradually to the wet ingredients with a spatula, dont over mix the cake batter.Pour the batter in a greased tin.

  • In a preheated Oven bake them for 30-35 min.


My cake is ready now.

Creme Caramel Custard- A Virtual Birthday Treat for Priya Suresh

Since its a special occasion for my co blogger,not my fellow blogger,my role model and ever charming cute lady Priya Suresh 's Birthday.She's one among a full spirited lady i have met in my life.She's an inspiration to lot of bloggers,Priya akka has more than 2500 recipes in her blog.She is such a lovely adorable person to mingle with.Even though she blogs from a long time,she never has the ego to start speaking with a new blogger.This v-treat is planned by my fellow bloggers and we all planned to make a special dessert for her.Its my great opportunity to celebrate a v -treat for her on her great day.




There's a one more surprise gift from our side,myself and few of my co-blogging friends decided to present an award for the birthday angel.



 Also i have given below the collage of desserts which enters to Priya sis's virtual treat.These desserts are prepared by my co-blogging friends Viji,Manjula,Sangeetha Vijay,Sangeetha Priya,Shama sis,Preeti,Divya Prakash,Nalini Sis and last but least ,the brain child of SNC, Divya Pramil..



Happy Birthday Priya Suresh Akka,here is my treat for you





Ingredients


Milk - 2 cup/200 ml
Condensed Milk - 50 ml
Sugar - 60 gm
Vanilla Essence - 1/2 tsp 
Eggs - 2

For Caramel Syrup

Sugar - 1/2 cup
Water - 2 tsp

Method

  • In a small pan add the milk and sugar.Place the milk mixture on gas top and boil for 2 minutes ,keep stirring to ensure the sugar has dissolved.And switch off the flame.Allow to cool.Once cooled add the condensed milk and give a stir.Keep aside.


  • In another bowl add the eggs and mix gently with a fork.Don't over mix the eggs.Just ensure the egg whites and yolks are incorporated well.Keep them aside.Now take the milk mixture and add them little by little.Meanwhile mixing the egg and milk mixture.


  • Once the egg and milk mixture are incorporated well strain them to filter out the curdled egg whites.Keep this custard mix aside.In a non stick pan or any other vessel add the sugar and spray some water and keep them on stove top ,do not disturb the pan.Let them caramelize and wait until the color changes,switch off the flame.


  • Now Preheat the oven 180 C.Immediately pour the caramel syrup into the prepared bowls/ramekins.Allow the caramel syrup coated bowls to cool.Let them cool for 5 - 10 minutes.Now in a small vessel add a litre of water and boil them,until bubbles form.Meanwhile place the cooled ramekins on a oven proof vessel.Add the boiled water on the oven proof vessel let the water level  be above 1"inch from the bottom of the vessel.Pour the custard filling into the bowls and bake them for 30 minutes.


  • To check whether the custard is cooked press the mixture with your finger If it springs back and looks firm ,it is ready now.else bake for more 10 minutes until done.



  • After the custard filling is baked take the bowls out of the vessel and allow them to cool.Once cooled place them in refrigerator and chill for 2 hrs.Run a knife around the edges of the bowl to loosen the custard.Place them upside down and invert again to serve.

Kachayam/Sweet Urad Dal Fritters

Kachayam,a kongu based evening snack.This kachayam can be made with maida,wheat and even rice,each of those preparation makes a different taste.Here i am going to make this traditional recipe of kongu region using urad dal.This is a perfect evening time snack along with your hot cup of tea.The sugar added to the urad batter caramelizes while frying and gives a crunchy taste,which will makes go for one more bite.Its so simple to make,with only  few ingredients.






Method


Urad dal - 2 Cup
Grated Coconut - 3 Tbsp
Sugar - 1/2 Cup or as reqd
Oil - for Frying

Method



  • Soak urad dal in water for atleast 2 hours.Strain the excess water and grind them in a mixer or grinder.Grinder is best to grind it,but i have done in my mixer.Once the batter is finely ground add sugar and grind once,check to the sugar level if it's ok you can proceed to the next step,else add some more sugar and grind again.Remove the batter and transfer to a bowl and add grated coconut.Mix well.

  • In a pan add oil and fry them in medium - high .

Serve them.

Ragi Pakoda- Virtual Bday Treat for Sangeetha Priya

Ragi pakoda,is a healthy evening snack.My mom used to make this ragi pakoda as our evening snack,after we return from school.I personally love this healthy pakoda.So simple to make and its crunchy and crispy bites satisfies our hunger.

This time being Sangeetha Priya of Nithas Kitchen's,birthday.I use this opportunity to celebrate her birthday by doing this ragi pakoda from her space.This is a potluck treat for Sangeetha akka.And my portion is to do savory/snacks.I have prepared this ragi pakoda in my style.

Happy Birthday Sangeetha Priya Akka...
 

 Ingredients

 

Ragi Flour - 2 Cup
Rice Flour -  2 Tbsp
Chopped Onions - 1/4 Cup
Chopped Green Chilles - 2Tbsp
Curry Leaves - Few
Salt - as reqd
Water - as reqd
Oil - to fry

Method

 

  • In a bowl add the flours, salt and give them a gentle mix. Then add the chopped onions,chilies and curry leaves,again give them a gentle mix.Then sprinkle water little by little to form a dough.

 
  •  Do not add water all at once,just add little by little.Once the dough is ready pinch small balls,similar to the size of a gooseberry,and place them in a wide plate.Meanwhile place a kadai add oil to fry the pakoda's.When the oil is hot enough to fry the pakoda's add the prepared pakodas's and fry them.
Enjoy with your evening tea.

Karuvepillai Saadam/Curry Leaves Rice

Karuvepillai saadam is a one more addition to my variety rice list.This time i had a lot of curry leaves bunches at home,which we got it from the local market.Already i have done curry leaves thogayal with them,and still more i had remainings of  the curry leaves.So planned to make the curry leaves rice in the same way as we do for the thogayals.As expected the rice came out perfect with the aroma of the curry leaves.





This is easy to make,you can also make the curry leaves mix the day before and store in refrigerator.Curry leaves are said to reduce the grey pre-mature grey hairs.Those who have premature grey hairs can eat whole fresh curry leaves and munch them,so in due course the grey hair may not spread.









Ingredients

 

Cooked and cooled Rice - 2 Cup
Curry Leaves - Hand-full
Garlic pods- 4 to 5
Dry Red Chillies - 2 to 3
Tamarind - a pinch 
Salt - as reqd

To Temper

 

Oil - 2 tsp
Mustard Seeds - 1/2 tsp
Cashews - few

Method:


  • Keep your cooked rice and ready and allow them to cool and keep aside.In a pan roast the curry leaves first and keep them aside.Again in the same pan add the chillies ,garlic pods and tamarind and saute for a while.When they are cooked enough,add them to the already roasted curry leaves.Allow them to cool.



  •  Add the roasted things to a mixer and grind them well and keep separately in a bowl .In a pan add some oil/ghee and temper with mustard seeds and add the cashews.When the cashews turns golden color add the ground mixture and saute for a while and then finally add the cooled rice and stir well.


  • Its ready to be served.Serve with sesame thogayal or pappad.





Tip

  • Could add crushed pepper for more spiciness.
