This was one of my favorite recipe ,recently ,after having a lunch in an AndhraCuisine restaurant.Generally am not much interested in choosing this Tindoora/Kovaikkai/Ivy Gourd veggie ,but after tasting this veggie i setup myself to recreate the same recipe in my kitchen.The taste was matching the restaurant serve,but its not a wonder to recreate at home,because this dish carries simple ingredients ,really simple.The only time consuming thing would be frying of those veggies.But if you wish to half finish the dish also,it would be tastier because the fried stuff carries the veggie's own taste.
It could also be a wonderful and ofcourse a healthier snack option for kids from back-school.I would suggest this for parents to mark this recipe in their list for making a healthier snack.Lets come to the recipe.
Ingredients
Kovaikaai - 200 gmCorn Flour - 1 Tbsp
Rice Four - 1 Tbsp
Salt - as reqd
Oil - for frying
For Tempering
Oil - 3 tspMustard seeds - 1/4 tsp
Jeera seeds - 1tsp
Big Onion - 1 Big
Green Chilly - 2 no
Red chilli powder - 1tsp (optional)
Curry Leaves - few
Salt - as reqd
Method
Wash the kovaikkai/Ivy gourd in wash and slice them lengthwise , Also slice the onions and green chillies lengthwise.Ensure the onions and ivy gourd are sliced thin.To the ivy gourd add the flours along with salt and mix the flours to get the coating. Do not add water.Do not keep standing time for this, after mixing the flours immediately fry them in oil.
- Keep the flame in medium and fry the veggies in medium flame.once the veggies got fried transfer them to a plate ,place tissue paper to absorb excess oil.
- Once all the veggies are fried in a kadai add oil and temper with mustard seeds ,then add the onions,green chillies and curry leaves saute them.Once the onion got well cooked and looks like a golden brown texture ,add the jeera seeds saute for few seconds and add the fried veggies .Give a stir.Turn off the flame and its ready to be served now.If you wish to add red chilli powder you can add after adding jeera.
